Roasted Sweet Potatoes with Green Onions

Sweet potatoes are amazing! If you don’t believe me, try this recipe. Sweet potatoes are some of the most nutrient-dense veggies you’llfind in the produce department. They provide good carbs that help keep your energy up without feeling a crash later on.

What I love most about sweet potatoes is that they are the perfect solution for thosesalty/sweet cravings.Sweet potatoes are naturally very sweet. Many peoplebump up that sweetnessby adding cinnamon, butter and brown sugar to theirbaked sweet potatoes. I, on the other hand, prefermore savory ingredients to play off the naturally sweet notes.

Here’s what you’ll needfor thisdish (plus brown sugar and olive oil):

Preheat your oven to 400 degreesFahrenheit.

Cut the ends off the sweet potatoes. I find that they are easier to peel when I don’t have to deal with the often oddly shaped ends.

Next, peel the potatoes with a vegetable peeler. Sweet potato skins are pretty thick and tough, so I don’tsuggest using a flimsy peeler.

Once the potatoes are peeled, slice them length-wise into 1-inchto 1.5 inchslices.

Then slice those slices into 1-inchlengths.

Finally, cut those slices into uniform pieces. Uniformity is key when cooking.If everything is the same size, it will cook at the same rate.Place the diced sweet potato onto a baking sheet.

Drizzle with olive oil.

Season with salt, pepper, dried thyme, and red pepper flakes.

Thyme is one of those herbs that goes well with so many things, includingsweet potatoes.

Use your discretion with the red pepper flakes. If you like your food spicy, use more. If you don’t, use less.

Sprinkle the sweet potatoes with a little light brown sugar. I don’t use very much, just enough to bring out the natural sweetness of the potatoes and to aid with the caramelization in the oven.

Toss to make sure that all of the sweet potatoes are coated in the oil and seasoning mixture.

Pop the baking dish in the oven and bake for 30 minutes, tossing the sweet potatoes after 15 minutes.

While the sweet potatoes are cooking, trim the ends off of some green onions.

Chop the green onions into bite size pieces.

After the second 15 minute round in the oven, pull the sweet potatoes out and add the green onion to them.

Mix the green onion with the potatoes and put the baking sheet back into the oven for another 10 to 15 minutes.

When the sweet potatoes are browned around the edges and the green onions have wilted, they are ready to take out of the oven.

Serve with a protein of your choice.
